“Hey Rod.......my wife gave me the what for yesterday for throwing my apple peeling and core away. With all the chemicals they use now, I don't like to eat the peeling and what the heck is with the core thing?”
“You can cook the peelings and core to make a jelly. I think after you boil the peel for a while it should kill the chemicals that gets sprayed on them. After you boil the core and peelings, strain the liquid and throw the solids into the compose. Add some apple juice to the remaining liquid, enough to make up 7 cups of liquid. Now add a package of pectin and bring back to a rapid boil. Add 7 cups white sugar (I have a problem with this, I'd try honey instead) and continue boiling for another minute. Remove from heat and pour into sterilized jars leaving 1/8” head-space. After placing the lids on, place the jars in a bath of boiling water, making sure the jars are covered by at least an inch of boiling water. Keep at a rolling boil for 5 minutes. Remove the jars and let sit for at least 12 hours. Store in a dark cool area. You can also make a tea with the peelings, adding a bit of cinnamon and honey to some boiling water. The peelings can also be roasted with a bit of butter, cinnamon & honey for a crispy snack. If none of this a-peels to you......just put them all in a compost and walk away.”
